Baker’s Best! Jane’s Favorite Recipes: Chocolate Chip ‘Mud’ Bars

This recipe for Chocolate Chip “Mud” Bars comes from my college roommate, Linda, who shares my love of sweets and chocolate. Perhaps that is why we got along so well and spent three years as roommates (sophomore through senior years) and have continued our friendship for more than 40 years.   

Linda and I had a reputation for baking brownies and bars in our dorm kitchen. However, rather than sharing them with the rest of the girls on the floor, we would bake our treats, cover them with a towel and scurry up the three floors from the kitchen to our dorm room, hoping to go unnoticed. After all, you can’t share a pan of bars with an entire floor of students. 

So, behind closed doors, we would indulge – just the two of us until we could eat no more! 

For us, chocolate is “the tie that binds!”

Linda’s Chocolate Chip “Mud” Bars Recipe

Ingredients:

  • 1 cup plus 2 tablespoons flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup butter, softened
  • 1 tsp. vanilla flavoring
  • 1 egg
  • 2 cups semi-sweet chocolate chips (divided)
  • 1/2 cup chopped nuts (I use pecans)

Directions:

  • Preheat oven to 375 degrees
  • In a bowl, combine flour, baking soda, and salt
  • In a separate bowl, combine brown sugar, butter, and vanilla extract until creamy; add egg and beat well; add flour mixture  
  • Stir in 1 and 1/3 cups chocolate chips and nuts
  • Spread into parchment or foil lined 9-inch square baking pan
  • Bake 23-25 minutes
  • Immediately sprinkle with 2/3 cup chocolate chips over top
  • When morsels are shiny, spread evenly
  • Chill 15-20 minutes to set chocolate before cutting the bars
