Attorney Pam Brown, who represented owners and Bedford residents Maria and John Cronin through the permitting process, said that the Cronins “had a vision and saw a need” for this type of food establishment in town. Brown added that she believes the addition of the frozen yogurt shop helps to provide “a good mix” of business establishments in the town center’s newly renovated Blake Block.

The Bedford Subway is expected to open this Friday, May 24 with daily hours listed in the common victualer’s application as 7:00 am to 9:00 pm, 7 days a week. There is seating for 18 in the restaurant but most of the business is anticipated to be carry out. The establishment is owned and operated by two Billerica residents, Harshil Parikh and Niral Gandhi who, according to Attorney Pam Brown, underwent extensive corporate training in order to obtain their franchise license.

Selectman Margot Fleischman said that, on Monday night, the Selectmen voiced concern about parking availability in the Bedford Marketplace Plaza, specifically in the area near the Subway restaurant that is also frequented by bank, post office and Café Luigi patrons and soon to be joined, additionally, by b.good customers. Specifically, Parikh and Gandhi were cautioned to monitor the fire lane adjacent to the restaurant where patrons might be tempted to park “just for a second” to run in for a quick, to-go sandwich.
