Health-conscious hamburger restaurant b.good’s application for a Common Victualer’s License was approved at the Selectman’s on May 6 meeting.  The restaurant will be opening in the Bedford Shopping Center on Great Road, in the location formerly occupied by the Cambridge Trust bank..

Restaurant co-founder Jon Olinto, who was present at the meeting, explained the concept of b.good as the original “better-burgers-and-fries restaurant,” which has since been followed by other restaurant chains. What b.good aims to provide is a healthier burger using ingredients that are as local as they can find and providing full disclosure on the nutritional qualities of each item on the menu.  Selectman Margot Fleischmann saw the information as “vital in educating people about healthier choices” when dining out. She suggested that given the restaurant’s proximity to the schools, early-release days may affect their business with a glut of middle and high school students on Wednesday afternoons. Olinto responded that the restaurant would be more than happy to accommodate the students.

The Bedford location of b.good is slated to open on May 29.
