Common Victualer’s License Granted to Panera Bread

By Kim Siebert MacPhail

Panera logoIn preparation for a late April opening of the 213 Burlington Road location, Panera Bread manager Jeremiah Tracy received approval from the Selectmen on Monday night for a common victualer’s license that permits the business to serve food. Prior to getting the Selectmen’s green light, Code Enforcement Director Chris Laskey and Board of Health Director Heidi Porter granted their approvals as well.

The dining concept at the Bedford location will be different from a traditional Panera experience.

“We’re going to have a carry-out and delivery catering center. It’s a brand-new production system for us and we are rethinking how we do all things Panera,” said Tracy. “It’s quite exciting for us and hopefully for all the businesses in the area as well. It’s designed around lunch. Also, for the residential [customers] in the area, we’ll be offering retail and delivery. The minimum order is $5.00 and we’ll deliver anything anywhere.”

There will be thirty common-area seats in the building’s atrium that are open to all, not just Panera customers. The building management’s staff will maintain the area, according to Tracy, although Panera will supply the furnishings.

“Whether you order from Panera or Flatbread or bring your lunch from home, you have a place to go and sit. It’s our contribution to the improvement of the common area,” Tracy said.

Operating hours for Panera Bedford are expected to be 6 am-9 pm, 7 days a week.
