
A branch of a national restaurant chain that offers “sushi in a bowl” apparently is coming to the Bedford Marketplace.
The website of Poke Bros says an outlet at 158-E The Great Road is “coming soon.” There’s also a telephone number, which when called went unanswered.
The address is the same as the former Subway sandwich business, which closed several weeks ago. The windows are covered and the lights are on at the site.
Scott Gould of the Code Enforcement Department in Town Hall said on Monday that no one has filed for permitting to undertake renovations at the Marketplace.
Poke Bros (pronounced Pokey) is only seven years old and has more than 80 outlets. Founded in Columbus, the home office is now in Newark, Delaware. The only current New England store is in Rhode Island; the website says another is planned for Westwood near the railroad station.
According to the company’s website, poke originated in Hawaii and can be defined as “sushi in a bowl.” The service is described as an assembly-line concept, “fast and casual – while healthy.”
Diners begin with a “base,” usually rice, and add tuna, salmon, or chicken, and follow up with a range of vegetarian ingredients – such as shredded carrots, sliced cucumbers, edamame, ginger, sweet onion, corn, seaweed, pineapple, jalapeno.
This is followed by a choice of Asian-style sauces, and toppings like toasted coconut, sesame, seed, crushed cashews, or crispy onion.
