Baker’s Best: Brown Sugar Banana Bread

There’s nothing like the scent of baking banana bread wafting through the house! With the Spring holidays and family gatherings, this quick bread is sure to be a crowd pleaser, and a perfect accompaniment to your brunch, lunch, or dinner. It is very moist and quick to prepare and stores well in both the refrigerator and freezer.

During my childhood, I recall Dad baking the most delicious banana bread. He baked it in a square brownie-type pan, adding extra bananas for flavor and plenty of brown sugar topping.  

It was a special treat and a tradition I’ve carried on for years in my own kitchen.

Brown Sugar Banana Bread Recipe

With the approaching holidays and family gatherings, this quick brown sugar banana bread is sure to be a crowd pleaser and a perfect accompaniment to your brunch, lunch, or dinner. Photo by Jane Taylor
  • Preheat oven to 350 degrees
  • Grease and flour one bread loaf pan

Mix together the following ingredients:

  • 3 medium bananas
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/4 cup canola oil
  • 1/2 cup vanilla bean Greek yogurt
  • 2 teaspoons vanilla extract
  • 3/4 cup chopped pecans


  • 1 3/4 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder

Mix well and spoon into bread loaf pan

  • Sprinkle brown sugar (generous amount) on top of the batter


  • 40-50 minutes or until done (toothpick inserted comes out clean)
  • Top of loaf should be golden brown


  • 15-20 minutes, then transfer the bread to a cooling rack
