There’s nothing like the scent of baking banana bread wafting through the house! With the Spring holidays and family gatherings, this quick bread is sure to be a crowd pleaser, and a perfect accompaniment to your brunch, lunch, or dinner. It is very moist and quick to prepare and stores well in both the refrigerator and freezer.
During my childhood, I recall Dad baking the most delicious banana bread. He baked it in a square brownie-type pan, adding extra bananas for flavor and plenty of brown sugar topping.
It was a special treat and a tradition I’ve carried on for years in my own kitchen.
Brown Sugar Banana Bread Recipe

- Preheat oven to 350 degrees
- Grease and flour one bread loaf pan
Mix together the following ingredients:
- 3 medium bananas
- 3/4 cup brown sugar
- 2 large eggs
- 1/4 cup canola oil
- 1/2 cup vanilla bean Greek yogurt
- 2 teaspoons vanilla extract
- 3/4 cup chopped pecans
Add:
- 1 3/4 cups flour
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
Mix well and spoon into bread loaf pan
- Sprinkle brown sugar (generous amount) on top of the batter
Bake:
- 40-50 minutes or until done (toothpick inserted comes out clean)
- Top of loaf should be golden brown
Cool:
- 15-20 minutes, then transfer the bread to a cooling rack
