Chipotle Restaurant to Occupy Friendly’s Site

According to information from the Bedford Planning Office, Chipotle Restaurant will soon take over the vacated Friendly’s site at the entrance to the Great Road Shopping Center. Until recently, the identity of the new tenant had not been divulged.

Steve Ells, the originator of Chipotle, opened his first restaurant in 1993 in a former Dolly Madison Ice Cream shop in Colorado. In a promotional video on the company’s website, Ells says that the idea came to him after he graduated from the Culinary Institute of America and worked at the famed restaurant Stars in San Francisco. Chipotle’s food is based on that of the taquerias Ells frequented in the Mission area of the city.

“The idea,” he says, “was that I could use these authentic ingredients but put my own twist on them,” The goal was simple: “To serve high quality, delicious food quickly with an experience that not only exceeds but redefines…fast food.” According to the website, much of what goes into a Chipotle meal is organically grown or humanely raised.

As for the timing of the opening of the Bedford Chipotle location, no definitive word is yet available.
